Mahi Mahi & shrimp in a mixed greens and Mexican quinoa salad

Tried my creative side today lol. Grilled Mahi Mahi and shrimp with a chipotle, ancho chilli, salt, pepper and cumin rub. The grilled some jalapeño and poblano peppers with tomatillos.
made some fresh dressing with avocado, fresh squeezed lime and orange juice, cilantro
and finished it off with a mexican quinoa salad with avocado, corn, black bean and tomato in a mexican marinade that I prepared.

Mahi looks really good but that quinoa looks freakin outstanding and when you put it all together you just went over the top!!!! Those are some of the nicest food pics I have ever seen! What is your lighting & camera setup? Second, what temp did you cook everything at to achieve such amazing results? My SWMBO loves mahi-mahi so I am always on the lookout for new recipes. Please share recipe/set up if you would.

I use a Nikon D300 with a 50mm f1.8 lens. I am the zoom lol!! I also have an SB 800 flash that I use as I redirect, but big believer in flash for close up photography.
As for the temp I cooked this between 450 and 500 direct grilling today. The recipe was an on the fly cook but ill try.
I used 1/4 tsp of chipotle powder, cumin, ancho chilli, sea salt and pepper. Gently hit them, mostly for colour.
I will post each component of the cook separately -
1 cup quinoa
2 cups water and boil
reduce to simmer then let cool
marindade for quinoa was
1/4 cup EVOO
2 limes juiced
2 tsp cumin
1 tsp sea salt
1 tbsp white vinegar
then added in 1 container of halved cherry tomato (1 to 1.5 cups)
1 can of corn
1 can of black bean
1/2 red onion diced
2 green onions diced
handle of diced cilantro
once quinoa is done mix it all together and let sit in fridge. add mixed greens right before serving.

salad dressing I made this.
1 avocado4 limes juiced
3 oranges juiced
2 tsp of Canadian Maple syrup
1/2 tsp tobasco sauce
1/2 tsp cumin
1/8 tsp of chipotle powder
1/8 tsp sea salt
3 tbsp of EVOO
I added a small handful of cilantro to the blender and mixed it all up.
it was a tad thick so I added a bit of water to be less like a paste and more like a dressing

diced up some avocado for the salad as well when I put it all together
