Costco Brisket Flat

doing a Costco brisket flat today. Injected last night
Rubbed with Dr. BBQ Rub #67 then put on at 235 with pecan wood. Meat was 37 degrees when it went on. Put on fat side down (there was hardly any fat). Put a little butter on it.
After one hour meat was 105.
Then I flipped it over and mopped with beef stock, melted butter, and some of the rub.
Doing this on Ceramic Grill Store Adjustabe Rig with sliding shelf.

I always wonder who ends up with the point when a flat only is sold?

3 hours. Meat temp is 146. Since there is no point and hardly any fat, I'm worried about it being dry which is why I'm mopping every hour.
I'm basically using Dr BBQ's coffee brisket flat recipe except for the injecting and mopping. Going to foil with coffee (and maybe some bacon fat and some rub) when it gets around 170. -

Hour 7. Temp 166. Wrapping and adding about a cup of mop (beef broth, butter, rub)

Pulled off at 195 after 9 hours. Rested about 45 min then sliced and ate. Served with charro beans, guacamole, pico de gallo, and grilled corn.
