    @johnmitchell The marinade was a traditional Puerco/Conchonita Pibil marinade. Achiote paste (somewhat hard to find, mine is from Fiesta market in Houston) orange juice, lemon juice, white vinegar, jalapeños, garlic, and red onions all blended thru multiple times w/ our Montel Blender.

    What about the Banana leaves though?  Keep them on throughout the smoke?  Have you done this before and if so how did it affect the bark production?

    @NPHuskerFL I haven't done it this way before, but yes the leaves stay on throughout.  This is a braise cook, so there's a lot of marinade it's cooking in.  This particular dish isn't one that will give you much bark.  Maybe and probably none.

    Do I moved the Puerco to the top rack and added a more traditional (injected  w vingar ketchup spices) shoulder to the bottoms.
    They are both happy.

    Nice cook.  You should have plenty of meat for tacos.  Love the pickled onion and jalapeño idea.  Care to share your recipe?

    @Hawg Fan Happy to share:
    I made a good size batch.
    Two red onions sliced thin and uniform (I have a mandolin slicer I use - only caught my finger once)
    Two Jalapeno peppers sliced thin on the mandolin as well
    2 cups apple cider vinegar
    1 cup red wine vinegar
    1/2 cup sugar
    I also add some Italian season, pepper and Slam Ya Mama to it.
    A tablespoon or two of crushed red pepper flakes
    2 bay leaves
    Bring the liquid to a simmer on the stove
    Add the dry ingredients and dissolve the sugar and salt
    Add the onions and jalapenos
    Let it sit until cool to room temperature
    Put the onions, peppers and liquid into a jar and let it sit in your fridge for at least overnight and as long as a month or two.
    Very good on just about anything.
