    @chubbs - a good sear in the butter and CI will make you not eat it any other way unless it is sushi style.  Prolly a waste of lump because there is no smoke taste but I don't funk up da house.

    I try to hit 90-95° IT.  I really like it raw so much more than that seems overdone to me.

    I've tried sushi, makes me gag.  Don't know why I can stomach raw beef but not raw fish.  The only way I have ever had tuna is out of the can.  whether it be tuna-fish sandwiches or a tuna casserole.  Now those scallops look downright scrumdilicious in my book.

    Never cooked tuna before. I would definately devour those scallops though.

    How hot on grid temp I have always wanted to try but fear messing up nice piece of tuna steak.  That looks perfect

    Grid was about 475ish. Preheated the CI for about 40mins or so.

    That's just pure poetry Matt!  Love the sesame seed crust on the Tuna. But, no cauli rice :wink:  Great pics also.

    How are you making the rice?  We use florets and then food processor on pulse.  Preheat 425℉, spread out evenly over pan lined with parchment & bake for around 15-20 minutes which gives a little browning and leaves it fluffy with nice texture. We also use just a little bit of Vidalia onion.

    I've done it like that a few times and I have also ran through the processor and stir fried in the wok.  To me that is the best way to really make it taste good but you also know I love my wok so it kinda goes hand in hand.  

    We are really diggin Hopped up Quinoa as a rice substitute.
