First Fire!

A day of firsts - my first time using a BGE and first fire for my XL. =)  I cooked shrimp ABT's - banana peppers for my heat averse wife and jalapenos for me. They're stuffed with cream cheese, some shredded cheddar, a finely chopped shallot, a large grated clove of garlic, and shrimp. I liberally dusted them with Dizzy Dust.

I cooked them at 275 for almost an hour with the plate setter and a chunk of apple wood. I had no problems regulating the temperature. Once I had it dialed in, it held 275 rock steady. 

Tomorrow it's spatchcock chicken with hasselback sweet potatoes - can't wait.  :)

My Weber kettle just became a relic of the past.
