To Rumrunner for his assistance in doing our corned beef. It was so easy and freaking good that I bought a couple more corned beef hunks to freeze and have on hand. They're cheap, easy, and they made the best corned beef I ever had. [p]In fact, they were so good, the wife looked at me and said the words I've wanted to hear since shortly after we got the first Large BGE:[p]"what we really need is a meat slicer."[p]Music to a gadget guy's ears.[p]During the cook:

Smokey,[p]I used the rumrunner corned beef recipe that's been posted by him today (and last thursday or friday). Simple and awesome, which is a hack cook like me's dream. [p]BTW, glad you're okay and hopefully feeling better. We was worried about you, boy.[p]Todd

Dos Huevos,
I'm not a great corned beef fan but then again it might be because I have never had great corned beef. Your photos are enough to make me try again. Looks perfect!

Dos Huevos,
What cut of corned beef did you use? It did not have any fat line down the center like most of mine do. Thanks, Tom

BajaTom,[p]don't hate me (at least not for this), but my sis-in-law bought it off the shelf at kroger. It was a factory packed tip, I believe. And yes, i know it's in a solution, but I figured it was gonna be pretty salty anyway, so what the heck.[p]The ones I've bought for freezing and cooking later were tips and I got them pre-packaged from the factory at walmart. [p]Hope this helps.

Smokey,
Grrr...I keep forgetting to call you at reasonable hours. I always remember at like midnight.[p]Maybe this evening if you'll be around.

Now that looks good. It was nice meeting you this past weekend. If I had known there was some of that around, I would have weasled my way around back to sample a little![p]Take care,
