Simple Spare Ribs

My oldest son had been asking for ribs for several days so while at the store I picked up a nice slab of chairman reserve st louis style spare rack. Setup was indirect at 225 with pecan and navel orange wood. Rub was a mystery baggie I found in the cupboard. Went with a 2-2-1 method with some beer in foil. Sauced with a new apple bbq sauce recipe and plated with green bean casserole and baked tator.

This mystery baggie, did it contain green stuff and did you feel funny after eating the ribs?

@saluki2007 - Only funny feeling was difficulty breathing - or maybe it was all the ribs and green bean casserole. I think it was leftover from a brisket as the rub was crazy salty. The apple sauce was really really good.

I thought about picking up the knife like the one in the picture but I'm not sure how that style works with ribs. The ribs want to shred whenever I attempt to cut it with a chef knife. @WeberWho? Works great for ribs and thumbs. Otherwise a sharp boning knife works well also but the one pictured above does really good.

I did some the other day as a test. No trim, left the flap in tact to snack on and wrapped with butter to finish. Turned out pretty good. Again, good looking ribs.

I'm actually cooking a rack of baby backs for my wife as we speak. The other 3 racks are for myself.
