My first Spatchcock - Sweet potatoes were first on the EGG for about 25 minutes or so, then transferred to the oven to finish - then the small, soaked chunks of cherry wood were added when the bird went on... 1 hour later at 390-400 degrees we were having dinner. Thanks to all the incredible help that this forum provides, the learning curve is becoming less 'curvy' all the time!

Congratulations on joining the crazies I would immediately find a good therapist who deals in addictions a source for good lump and introduce yourself to the local butcher. I would also talk to the bank if they give out home-equity loans in order to feed said addiction. I would also start looking for room for your second egg.
