Pizza and Basketball tonight

Prepped for pizza. Pulled out the slicer for the pepperoni sticks. Got mozzarella shredded. Onions are sweated. Sausage cooked. Dough from the local pizzeria. Sauce ready.

Well the first one was almost a disaster cause I didn't put parcent paper on the peel. Had to fold it over and pull it back on the parchment. No pic on that flub. The second was a white with EVOO, fresh crushed garlic, mild banana peppers, roasted red peppers, and sausage. That turned out better.I like my butt rubbed and my pork pulled.

This is the first time I employed the "doming" technique on this one. Toward the end the bottom crust was done but the top needed some more. I lifted it up into the dome to try and pull some heat from it.I like my butt rubbed and my pork pulled.

I still can't master the dough spread like Sal does at A N.Y. Slice. His pie technique is spot on.
