I am cooking a stuffed chicken breast, I have 2 probes in it and they are reading 20 degrees apart, should I trust the higher or lower temp?

I would try switching the probes with each other. If you get the same readings then you have a hotspot on your egg and need to reposition your meet. It may be as shifting the grate or you might have to move the meat.

You didn't say if you cooking using a direct or indirect heat method.

    Zee,
I would come closer to trusting the lower temp myself. Next time you might want to check your gauges to see if they are correct.
Just make sure that the juices run clear coming out of the chicken.

    Zee,
Ahhhh. Reminds me of the man with two watches. He's the one who is never sure what time it is.

  • Zee,
If the tips of the probes are not exactly in the same place in the meat it would explain the difference. One might be closer to the surface and one more near the center so they would read different. Me, I would take the average between them. Also the clear liquid dripping advice is most important.
