Reverse sear chops

Tried a reverse on some thick ass chops we had, the wife loves a burnt crust on chops so I thought I would give it a try. Cooked raised direct at ~275 till an IT of ~125, then opened her up to 600 with the CI skillet on, tossed the chops on till an IT of 140. they turned out great. I love a thick crust on them as well. Have a great rest of the week everyone. This weekend is going to be crazy, looking at temps around 16 C (60 F), unreal for March. Should take care of a lot of the snow.

Nice chops! Btw IMO butter might burn in the pan at searing temps. Not sure though.
