Sunday Cook: Beef Short Ribs on Mini

I am calling the mini up to bat today. Going with beef short ribs. Planning around 5 hours. Nice little test for the mini. Here is a pic of the victims and more to come.

Can't go wrong with any cut of beef ribs-and those look like a winner. I judge the finish-line with the tooth-pick test. Somewhere in the 5 -6 hr mark running about 250*F on the dome. @Chubbs-given the more compact nature of the mini you may find them finished a little sooner. Regardless, a banquet awaits!Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.
