An oldie but a goody. Steven Raichlen's recipe from his Primal Grill Website.

Whipped it up last light for Taco Tuesday. My wife also made some awesome homemade Guacamole. Not sure what recipe she used for that. And sorry, no pix of the final tacos. But y'all have seen tacos before.

The last step confused me. The salsa looks good to go right out of your food processor! What's the last step for?
"...Heat the lard or oil in a large saucepan. Add the tomatillo puree and fry over high heat until the mixture is thick, slightly darkened, and highly aromatic, 3 to 5 minutes. Whisk in the stock and boil the salsa until thick and flavorful, 5 minutes. Whisk in the sugar and salt and pepper to taste: the salsa verde should be highly seasoned. "

@KiterTodd , it's to thin it out a little further and add the last dimension of flavor I suppose. I brought a big bowl full of it along with a bag of chips for my coworkers today. Everyone loved it. Definitely a recipe worth checking out.
