Bought this bone in rib eye on Sunday at Rest Depot.
Plans changed and did not get to cook. How long will it stay?

It's too late. Pack it with dry ice and ship it to me for proper disposal.

You are fine for a looong time as long as you keep it refrigerated.

Can you find a pack date anywhere on the label? Should be fine up to 30 days or so. Nice wet age

x2. If it is cryo packed then I think 4 weeks is no problem. It will get better every week you wait. I've done 6 weeks with a brisket a couple of time.

If cryo packed you have 110 days, wet age peaks at 30-45 days. If not cryo packed you need to cook or freeze within a week, or dry age as previously mentioned. Most packers do not date stamp the individual cryo's so you really have no idea when this was packed.
