this turned out well and was a fairly easy cook. Marinated chicken four hours.

3/4 cup unsweetened coconut milk1 tablespoon fish sauce1 tablespoon packed light brown sugar1 tablespoon Thai red curry paste1 1/2 teaspoons kosher salt

Great looking meal. Do you use hot peppers in your Thai cucumber salad? I make mine with a couple of little Thai Hots in it to give it some kick.
