For all of those who did a ballotine chicken, what setup did you use, temp and time? I am cooking one today, and I need a rough estimate. I know to cook to temp, but I have a relatively small window to serve it, so I need a ballpark cooking time. I was thinking 350 dome, elevated, indirect. I am thinking it will take about an hour. Does that sound right? The bird weighed 5.9 lbs prior to deboning.

I think at 350 you are looking at about 1.5 hours. Obviously it depends on the size of the bird/stuffing. I would plan for 1.5 or bump the temp up to 375-400.Which came first the chicken or the egg? I egged the chicken and then I ate his leg.

Thanks @SmokeyPitt The wife of our company is a pepperoni pizza addict. So to try and make her happy, I am stuffing with touch of pizza sauce, then mozzarella and pepperoni and some seasoning. Since I will layer the pepperoni and cheese, and want to give a good 15 min rest for the cheese to partially set, I hope it is not going to be gooey mess. I do not care how long it takes to cook - I have all day and am very flexible. Our company however, only has a limited amount of time with us, and are bringing 3 little girls < 3 yrs old with them. So I am trying to plan it so I pull within 15 minutes of their arrival. Thanks for the reply!--------------------------------------------------

@Sea2Ski I cooked mine raised high in dome indirect 375-400 dome for about 45min. My chicken was a small 2-3lb i think. Skin came out perfect.

It came out great so good the guests took the leftovers home from the one I made on sat, and made another on Sunday. Sunday's, I remember to add the sauce, but ran out of pepperoni, so I uses soppressata on one half. Bummer right?
Both cooked at 375 indirect for 1:15 and 1:20

Thanks all. It was very good. @jcaspary if you do indeed do one, I would suggest serving the sauce on the side. While it was very thick when put in, a lot of liquid is produced from it and is not needed. I think it would just work better if either served warm on the side, or poured on top after slicing.--------------------------------------------------
