Brisky finally gave up the ghost at 201. Separated the point and sliced for immediate consumption. The leftovers will eventually be chili a la @EggObsessed.

Last cook of the weekend. Tasso ham. Egg settled in around 260 so we'll go with that. Still hot from the brisket so just add lump and let her rip. Let this run to 150IT and enjoy in some beans or gumbo.

Thanks all, it was a lot of fun and I don't get to do this very often.@Jeepster47 I'll get that tri tip in the next few days. The wife is really on me to use the wok. I got it all seasoned up today so I imagine I'll try to please her (heehee) tomorrow night. Stay tuned.
