Philly cheese steak

Did a Philly cheese on a cast iron pan sitting in my PS woo. Did it indirect at 300 deg. Sliced two rib steaks into ribbons, cut up some bell peppers and red onion, dashed on several different chipolte spices i have, and topped it with some swiss cheese. I used two chunks of oak for smoke but I think it was to much for my wife and my taste. It still tasted very good.

While that looks like a damn good sandwich, a cheesesteak even... It isn't a Philly cheesesteak. A traditional Philly cheesesteak would not have bell peppers of any color, no chipotle sauce, and no Swiss. It's either steak, or steak with fried onions, and possibly mushrooms. The cheese is either, American, provolone, or cheese Whiz...
