All that hard work and not everyone knows all the details of what you all went through. I figured this thread could be a way for us to better see what the others had done. No pressure, and if you didn't take pics I understand, but if ya got em Id like to see them. Here's mine.
Chicken, prosciutto, parmesan and parsly sausage, garlic, feta, and spinach.
The plated portion was the leg, thigh and wing-lollipop.
So then I figured, What should I do with the leftovers…
Had to add some extra chicken due to not enough leftovers lol
And that's that.
Looking forward to see the others!

Here are my pics, beets and goat cheese were leftovers in the fridge. They are a go to staple in our house. Chicken was 5 lbs seasoned the inside with salt, pepper some balsamic and Olive oil. Outside just salt and pepper, then basted with balsamic towards the end. Really was a last minute decision big I'm glad I did it.
Also @theyolksonyou I would totally buy one of those shirts if you ordered them. -

@blind99 I have done them on the egg but I usually wrap them in foil so I don't get any smoke. I will give it a go next time around. This how we usually eat it. The pic has a white balsamic gel (my dabble into microgastrology). The white beets and red beets are from our garden. Way better than store bought.

I have about 10 pictures all of the same thing. It was hard enough just to take those those 2 pictures.

I do them on a regular basis now. My stuffing is usually a mix of traditional bread stuffing, dried apricots, cashews or pistachios and a layer of maple sausage (casing removed).
The last two that I made for Christmas at my brother's place (not cooked on the egg)
This is what my stuffing looks like
I think this is the first one I made. I cut the bteasts instead of the back... I recovered the situation by wrapping everything in bacon

@U_tarded those look incredible! I love beets. Next time you smoke something throw some beets on, in their skins. When they're done cooking and the skins are peeled off, they have a really mellow smoke flavor - not at all overpowering.Chicago, IL - Large and Small BGE - Weber Gasser and Kettle
