First time meatloaf so I went big!!

Five pounds of 80/20 and one pound ground pork. Stuffed with homemade smashed potatoes, sharp cheddar, pepper jack, and brown sugar bacon. Mixed corn, red pepper, and onion in with the meat. Update later!

Sounds interesting. Of all the things you listed, the only things I have ever put in a meatloaf were beef and onion. And the most beef I ever used was one pound.
I hate it when I go to the kitchen for food and all I find are ingredients!
