Just threw on an 11.5 lber and 7.5 lber. Going low and slow overnight. My parents are staying over with us tonight and I'm cooking for a group of 16. Uncles, aunts, cousins, brothers, sister in laws, nieces, nephews, etc are coming over tomorrow for my Ma's 63rd birthday. Gonna make some barbecued baked beans, mac n cheese, rice, green beans and cornbread to go with. My parents brought some southern hash and collards. And the Mrs. made my grandma's (Ma's mom) pound cake for dessert. Ma's favorite. House smells nice and sweet! And the backyard smells nice and smoky! Good times. Stay tuned for more pix tomorrow.

Looks good so far. I know I don't need to remind you, but for others reading the thread, be sure to treat them separately. Large one could come to temp before smaller one. Each chunk of meat cooks differently.

That color! And I love that you didn't shred it into microfibers. I don't understand why people shred the texture away. Frankly I like it even chunkier and looser than that. Keeps the heat and moisture and texture better, IMHO. I could literally just eat a butt just by tearing off chunks with my hand.Where did you get and 11+ butt? Biggest I've ever found is just over 10.

Thx guys!! @rtbarry , got the butts from Wally World. Can't remember the brand. The 11.5 lber only took about 1.5 hours longer to cook than the 7.5 lber. Kinda surprised me. And these barely had a fat cap at all. They were very, very meaty... They didn't shrink much. But they were also very juicy. Good stuff. Maybe even my best ones yet. The Mrs. agreed.
For the smoke, I added Apple chips along and along as I tossed in the coals. Got it nice and mixed up rather than just placing a bunch on the top. It will be my go-to way from now on, because I had a slow, steady swirl of smoke all night.
I decided on a low and slow this time rather than turbo, since I had to have them ready by lunchtime. It was just easier that way since I had so much other stuff to prepare this morning. The timing was spot on.
Here is the only other pic I was able to snap (without looking like a complete weirdo in front of all my family...lol). Busy day! Everyone is gone now, the house is clean and the Mrs. and I are enjoying some peace and quiet in front of a fire. Cold beverage in hand.
