@Acorn...I cook the meat to 160 IT at 250 grid then bump egg to 350 put meat in pan then cook for 3 hours. Shred and then back on for 30 min or so.
@jcaspary this is some awesome stuff! Here's the recipe
4lb chuck roast
Pepper roast very liberaly
250 indirect for around 4-5 hours til 160 IT
Meanwhile
Slice up the following and put into roasting pan
1 large green bell pepper
1 large red bell pepper
1 large red onion
2 jalapeño pepper (deseed if u want)
2 tbl of garlic
A little Worcestershire sauce
1 bottle of your fav beer. I use shiner bock
After meat reaches 160 place meat on top of veggies in pan and cover tightly with HD foil. Put back on egg at 350 for 3 hours. After 3 hours pull and uncover the shred beef and mix with veggies. If there is a good bit of liquid in pan put back on egg uncover for about 30 min to reduce.
Eat on sandwich or over rice. You can't go wrong!

Nice! One of my staple cooks as well. I heated some leftovers over grits the other day and wow!Which came first the chicken or the egg? I egged the chicken and then I ate his leg.

Wow. I bookmarked a previous post about this and have always wanted to do it. I can't wait any longer. Next weekend it is!! How long at that temp did it take to get that roast up to 160°?LBGE (2012), MiniMax (2014), and too many Eggcessories to list. - Sudbury, Ontario

Today it took 5 hours...at about 4.5 I bumped it up from 250 to 265. I'm sure you could go higher temp make shorter cook time but I like it slow. Seems to make it that much more tender. Good luck!Brandon, MS
