Hi all,
did my first beef brisket cook pulling some of the advice that I've collected from the forums. decided to keep it simple with salt, pepper, oak wood and 250f indirect heat. came out moist and flavorful. thank you everyone for posting your cooks for me to read and thank you for looking!!

Thank you all so much for all of the kind words. It took approximately 10 hours to cook and the taste was unbelievable. I've done many pork bbq, but hardly any beef. The brisket was so tasty and juicy. Thank you all again!Kamado Joe Big Joe, Classic & Junior

Now I'm hungry.
Nice to know you can keep it simple and get great results. I think next party I'm going to do two briskets...one with just S&P, and one all done up with the mustard and rub. See if there is really that much of a difference in quality and amount of flavor.

Wow. Nice. My first looked and tasted like something my cat left in the litter box. Took me a while to get it right. Once I got the large egg, all was good. Gasser to the curb and game on for real bbq.Keepin' It Weird in The ATX FBTX
