A few racks of ribs for tonight's dinner. A simple rub of coriander, garlic powder, onion powder and paprika plus some of my steak spice.
Here they are in the egg with a little apple wood 6oz's.
Finally done. Did 2-1.5-1 hours could have used an extra half hour foiled for my liking.

Those do look good ... if I cooked three full racks, we'd be eating on them for a week. Tell me why you chose the 3-2-1 type of cook ... I assume that's what you did. And, why cooking foiled is so important.

@Jeepster47 the 3-2-1 type of cook provides the color and bark needed for nice looking ribs plus the tenderness for fall off the bone ribs. I like to foil to give me the fall off the bone type of texture instead of having to much bite/pull to the ribs. My family likes em tender.
Tonight the ribs were very tender yet still had some pull/bite thats why I said maybe another 1/2 hour in the foil would have done the trick. -

@Sammi I really like the Barberian Steak spice it's one of my favorites, so I thought let me try some on the ribs. I don't know where you buy yours if you use it yourself but I bought some from Barberians restaurant itself cheapest price I've seen so far.

@victor1 250 indirect for 2 hours then wrapped in foil for 1.5 hours then unwrapped for 1 more hour. For my liking they should have stayed a half hour longer in the foil. I like my ribs falling off the bone with no pull.
