My Get Rich & Lucky for the Year Meal

In following all the New Years get rich & lucky meals, I give you my best shot at CenTex's brined(water,salt,sugar & cloves) Center Chop rubbed with a mix of Tsunami Spin and Swamp Venom .
Reverse seared,well kinda. I set the small up for 225 indirect with some peach for smoke let it go until 100 and pulled the stone out and cranked the heat to around 500. This is when I started brushing on the glaze at every flip. The glaze was just 50/50 mix of mustard and honey. Once the IT hit 130 I pulled the woo and put the grid on the fire ring for a quick sear.
Plated up with Collards and Black Eyed Peas.

Thanks guys!!! Most definitely some of the best chops that I have made. My wife is not a big pork eater and she ate all of hers which was just a tad smaller than mine.
