Sunday Stuffed Meatloaf...

Attempting my first stuffed meatloaf today... The wife requested meatloaf and mashed potatoes, even the instant kind she said... She just didn't say the taters had to be on the outside of the meatloaf...
Going with a @SGH inspired version using instant loaded potatoes, Colby Jack cheese sticks, and the meat will be as I did my last one, 80/20 mixed with minced onion, Dijon mustard, and crushed Tabasco cheez-it's then I'm covering the outside with bacon and trying Meat Church Honey Hog BBQ rub that they were nice enough to send me to try out.
