Left Over Prime Rib Roast Ideas?

Well Time to start a Leftovers thread.... Any good ideas on using leftover prime Rib Roast? I egged a 9 pound 4 bones. Turned out amazing.
Because our Christmas Dinner was surf (Crab Legs) and Turf (Standing Prime) I have about half of the Prime remaining.
Let the ideas roll!

It will make a fantastic Philly Cheese Steak. Slice it up thin, heat it up with some onions, peppers, mushrooms or whatever you like, find some good rolls, add some Wiz or smoked provolone and you are good to go.

Beef barley soup and/or cook the bones down for stock for French onion soup.

Just messing with you above. What TJcoley said above is what we do if there is any left. More often than not we don't have leftovers.

If the sandwich idea doesn't suit you, it could also put in a batch of the Salado brisket chili. If you haven't tried that recipe, it's outstanding.L x2, M, S, Mini and a Blackstone 36. She says I have enough now....eggAddict from MN!

I am planning on making a 4 rib bone PHO with the leftovers and scraps of the roast can be used as well.Also- Not my thing... but I recently heard of someone taking leftover ribs from a pr-roast and braising the heck out of it, then turning it into a stroganoff.
