Glazed Pork Loin

Options
Glazed Pork Loin with Cilantro and Garlic
Adam Perry - Serious Barbecue (p.71)

Becoming a big fan of Brine and seasoning the cutting board - This was a success!  Apricot was the main ingredient here.

Cooked indirect at about 300.   Bought a big Pork Loin from Costco and cut it in two to fit in the bag to brine.

After a few hours, pulled at 145

On the plate with some home made mustard beans, and a carrot and beets combination.

Looks good. Like pork with sweet fruit. Haven't tried apricot, but sounds fantastic.

That looks perfect! I've been wanting to do a sweet fruit glaze on pork.

Nope, got it at the Guelph location.  They have a better selection of meat and the store is larger so not bumping in to everyone.  Also have a gas station there where gas is usually five cents cheaper per litre.
