What to serve with Ham on Xmas?

It turns out I will be hosting Xmas dinner for family this year.

I'm used to hosting Thanksgiving with Turkey.

So I'm interested in what suggestions for side dishes my fellow Eggers would recommend.
& unlike the Turkey this year in the oven, I will be Egging my ham.
Large BGE in a Sole' Gourmet Table
Using the Black Cast Iron grill, Plate Setter,
 and a BBQ Guru temp controller.

Medium BGE in custom modified off-road nest.
Black Cast Iron grill, Plate Setter, and a Party-Q temp controller.

Location: somewhere West of the Mason-Dixon Line

    Candied Yams, Mashed potatoes, just like Christmas......I like cornbread dressing....
    Salado TX & 30A  FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.

    For me potatoes and green beans go with ham. Fix your favorite style of each.

    To honor the ham it will be a kick butt scalloped potato dish, green beans, congealed blueberry salad and rolls.

    Shredded cheesy potatoes and I agree with the above green beans.

    Glad to - trust me - I never cared much for scalloped potatoes until I started making these - they ROCK!

    ULTIMATE SCALLOPED POTATOES

    Source: The Best of the Taste of Home – the first 10 years – published in 2004

    1 tea butter softened
    1 cup whipping cream
    1/3 cup milk (fraction symbol not working – that’s one third of a cup)
    1 tea salt
    ½ tea pepper
    2 large garlic cloves, crushed
    6 medium red potatoes
    1 cup (4 oz) shredded Swiss cheese
    ¼ cup shredded Parmesan cheese

    Grease shallow 1.5 qt baking dish with the butter – set aside.

    In a sauce pan combine cream, milk, salt, pepper and garlic. Cook just until bubbles begin to form around sides of pan. Remove from the heat; cool for 10 minutes.

    Peel and thinly slice the potatoes; pat them dry with paper towels. Layer half of the potatoes in the prepared dish ( I overlap them by one half and in tight rows). Pour and cover well with half of the cream mixture and then spread half of the cheeses. Repeat this layer process. Bake uncovered, for 350 for 55 to 65 minutes or until potatoes are tender. Let stand for 5 to 10 minutes before serving. Yield is 6 servings.

    So with scalloped potatoes being a casserole type dish, will it be too many casseroles to do a green bean bake?
    Should I saute the green beans with onions in bacon fat and some garlic?

  • Forget the bacon fat. You already have a smoked ham. Put some slivered almonds in with your garlic and onion green beans.

    suit yourself, but I think of the scalloped potatoes being more just that than a casserole.

  • Along with the hams we will have the Candied Sweet Potatoes, Scalloped Corn Casserole, Green Bean Casserole ( with french cut green beans) Mashed potatoes and Gravy, Jello Salad, Homemade Dinner Rolls.

    OK, I'm going to go with scalloped potatoes with swiss cheese per your recipe (I was originally thinking of using cheddar) and I will make my green bean bake with cheddar in it as I normally do.

    I understand your association with the cheddar and my initial thought reading that recipe years ago was the same. But I decided to stick with the grated Swiss cheese and glad I did! I hope you like that recipe as much as we do.

    How about mashed sweet potatoes or candied yams? I think they would go great with the saltiness of the ham.
