Friday Night Surf & Turf... Saturday Baby Backs

Making dinner for the ladies and I this evening... Some U-10 scallops seared on the egg, along with a filet for them and 1-1/2lb porterhouse for me. Going to do some sweet potatoes and asparagus for sides.

The "special" dinner is for my daughter's efforts in school and because it was too late the other night after her concert to have a decent meal...

Picked up 3 racks of baby backs that I'm going to do tomorrow for my nephew. It's part of his 16th birthday gift :) Going to prep them tonight, pull the membrane and then rub them with Bad Byrons. I just got a bad of orange wood chunks and was thinking about using that and some hickory for smoke tomorrow. Planning on going low at about 225-230 till they pass the bend test.
