So Simple But Yet Very Tasty

Cut some deep slits & marinated some chicken breast in spicy peanut sauce. Egged @ 450 raised direct and put some peanuts on the last 10mins for a quick roast.
Wrapped up in some fresh lettuce with julienned carrots and just a little more sauce

I never have tried the peanut trick. But it sure looks like a winner to me =D>

I added some soy sauce and red pepper flakes to the marinade. The sauce has a nice kick but needed a little love added to it. in a small saucepan we start with a can of coconut milk. we melt some peanut butter into that (I use chunky), add some garlic, sriracha and I usually grate some ginger into that or put a chunk of ginger into a garlic press and squeeze the juice into it (ginger will stay in the press d/t fibrousness). you have to heat slowly and add the peanut butter slowly to get it melted and get the viscosity for how you're going to use it - thickens way up when it cools. then add the rest to taste. Sometimes I've added a bit of fish sauce or used chili garlic sauce instead of sriracha
