Tried to think of do I haven't done and came up with this. Ended up cooking for myself because I refused take out.
2" center cut chop
Sautéed garlic, shrooms, artichoke and spinach. Cooled and mixed with mozzarella. Cut and stuffed chop...season salt.
Went 300 indirect till 120 and pulled...had to wait longer than I wanted because nobody respects my schedule. Reverse sear at 600, cast iron and coated chop with butter.
It was better than steak. Nice crust, warm stuffing, ...will do again, again, again. ..
