I think roast beef you get at the deli is usually made from top round, but it needs to be sliced pretty thin. If you don't have a slicer it can be difficult.If you want to do cheese steak style sammiches you can partially freeze a hunk of ribeye and then slice it thin (sort of into chips of beef) across the grain and then griddle it up.Pulled beef is awesome as well. I have done both Clays and the pepper stout beef and they are both great.Which came first the chicken or the egg? I egged the chicken and then I ate his leg.

ive done rump, top sirlion, eye, and top round. eye is too easy to overcook and is lean but some like that. up here rump has about 4 muscle groups and has that soft white fat, good flavor but lots of fat that im okay with. top sirloin and top round taste the same to me as deli beef, one has a grizzle line in it, i think thats the round, those are better. hard to beat ribeye though. eye makes great pit beef, i would go with the top sirloin for deli beef. heres part of 16 pounds rump so you can see the fat content

I like smoking and thin slicing tri-tip across the grain
