The family voted.. didn't have time to grind them so picked up some pre-pattied at Kroger. 225 indirect, mesquite chunk, season salt, brushed with mix till 130. Took them off, removed ps, cranked to 500 with ci griddle. Brushed again and seared till 160. Jacob commented on the crust. The mix was butter and aged balsamic vinegar. Actually, I was pretty happy.
