Done gone and entered a Chili Cookoff

Was asked to enter my Meteorite Salad in a cookoff at work. Five pounds of flat iron and every pepper at the grocer's. Plan to sear @800 and move to second egg to cook @350. Once cubed all in Dutch oven for the finish. Cooking pics will follow later this afternoon. @Mickey I promise no beans!

Good luck. Real Texas Red has NO beans.Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.

Cooking shots along the way. Flat iron ready to go on at 700. Seared 1 min all 4 sides. Kinda spooky. Sitting in a 350 egg at 68 degrees. Shooting for 130 to finish cooking in the Meteorite Salad. Shot of the fuel that fires the meteor. God bless the tasters.

And the finish. Steak cut into bite size chunks. Fired up the meteor with a good collection of heat. In the freezer until Friday's cookoff.
