New egg, how many fires before I can start to get it hot?

What is an easy way to smoke ribs and pork shoulder?

  • Welcome. Really one low cook 400 or under should cure the gasket. For smoking a butt or brisket you will need a plate setter or a stone to set up indirect. Load it up with lump and your choice or wood and shoot for 250 dome until you hit your target temp. You will just need to play around with it to learn how to set your vents and search the forum if you are after more detailed info, more than one way to skin a cat.

Mic key's coffee rub. Google it. He's a legend around here. If you don't have the stuff salt and pepper will work fine

  • just cook. forget the gasket. I havent had one on my xL or med in years. No issues.
Be careful, man! I've got a beverage here.
  • We recommend 4/5 cooks under 400 degrees and have found that the stock gasket will hold up rather well after curing up the adhesive.

Your gasket will be fine or fall off. Nothing to do with how you do your first cook.

This is how I cook ribs. Baby Back Turbo Ribs (No flip) 350 indirect for 1hr 40 min. Before cooking: Pull membrane , rub, mustard, rub. Put on at 350 and leave the hell alone for about that time. This is called turbo ribs and I will never go back to 4 and 5 hour ribs. Note: with or w/o mustard works .. I like Bad Byron's Butt Rub / I like cherry & pecan mix for wood. If you want sauce: opened 15 min early and sauce. I like the sauce on the table.
