Crispiest wings EVER, plus I'm sick of turkey posts!

Since I don't have to cook tomorrow, (hahahahaha, evil laugh) I thought I would try some more wings and work on the crispy skin. ( I get to cook Saturday to accommodate multiple parents/ family members.) And I kid of course I love seeing all those delicious birds, keep em coming!
My technique this time was:
Pat wings dry with paper towel
Dust liberally with cornstarch first, then heavy rub, then more cornstarch
As they sat on the counter I noticed the rub and cornstarch starting to look moistened, so I hit them AGAIN, with a dust of cornstarch.
Cooked raised indirect
Cook time around 45 min
Put the hasselhof tater on 15 min prior, stuffed with pressed garlic , melted butter, and spices.
These wings were awesome, and so crispy, you would think they came out of a deep fryer, I am super stoked on the results.
Of course I had to toss some in Buffalo sauce made with Franks Red Hot sauce and butter. The rest were eaten crispy with the Plowboys Yardbird rub alone.
First time for the Hasselhof potato, enjoyed it.

I've been tinkering with my wings lately as well. I use a fine strainer and sift the cornstarch on the wings. I think the key is getting them as dry as possible beforehand.Nice cook! @Ragtop99, I saw this style potato on someones post, looked good, so I googled and found a recipe on food network, their called Hasselback style, but I thought Hasselhof sounded funnier.Put potato on large serving spoon and slice down hitting the spoon and not going all the way through potato. Pushed garlic in between the slices and drizzled with butter mixed with a rub.
Cooked raised direct for an hour or so til probed easy. I then topped with sour cream and more butter....divine!
@eggbertsdad, great idea, I thought of a flour sifter too, I just fine dust them by hand. I was going to take an empty rub container and make a dedicated cornstarch/rub container.

If there are any white spots left after a few minutes, spray them lightly with olive oil or Pam.

@LittleSteven, thank you for the tip! Did have a couple heavy white spots, the good news is I can't taste a heavy coat of cornstarch!! I don't even know it is there, it does however give me that satisfying crispy skin.
