While stuffed pork loin pic heavy

Bought a 8 lb pork loin at SAMs 16$. I brined it yesterday til today. Then I butterflied it, guy on YouTube made it look easy, I roast 3 red bell peppers, puréed it, took whole bulb fresh garlic chopped it fine, 3 lg sprigs of fresh rosemary chopped it fine. I spread a layer of it on meat, then a layer of Parma prosciutto, then layer of sharp provolone then baby spinach. Then rolled it and tied it pepper on top it's goin on at 12 noon. Will send finish pics

Here it is used leftover roasted red pepper garlic an olive oil. Added balsamic. Took of at 135. Very moist every one loved it
