Chicken rollups

I tried my first cook of the rollups tonight. Flattened breasts next proscuitto, one with smoked gruyere and raging river, one with baby swiss and tsunami spin. Cooked 350 dome raised grid direct to 160 degrees with guava. Good enough to eat the two but was expecting to get my socks knocked off. I want do again but want to hear other people's recipes and methods.

maybe some caremelized onions and mushrooms in the rollups, and a pan sauce to dump over top of it all?? When you trim up your chicken meat brown the trimmings in your pan with a little oil and a bunch of heat to get some browned up bits for your sauce. Some butter, sherry and your in bidness.[p]Getchya a good drizzle of flavor-loaded brown sauce on top of it all![p]Oh yeah, put you some garlic in the onion/mushroom deal. And for the Tsunami one, a little kick of ginger in the sautee in place of the shrooms![p]Just some idears. Look forward to seein what others say.

ccrider,[p]I havent tried it yet, but...[p]Spinach/ham/toasted slivered almonds and sesame seeds/cream cheese.[p]I am not sure how it would turn out, but I have had that combination in my head for a couple month now. Maybe tomorrow.[p]E

The cool thing is I aint gotta cook nuthin! More than 30 people will be here that cook in their sleep. I do have some nice Elk summer sausage a neighbor just brought over.[p]So cool that you are coming up.

Saute some onions, mushrooms, garlic, & parsley. Blanch some asparagus tips to put in the middle with the stuffing. LOL, Tom.
