Sad day for my egg dealer

Hadn't been by in a while and stopped in just to chat and pick up something I didn't need.
His store used to be solid green and BGE. He started selling some Komodo Joe a few years ago. Well walked in today and it was solid red :-/
Dude said the Egg couldn't keep up and he had to devote floor space to what was selling. Oh well.
I did snag this. Never used one. What should I cook first??

Tell your dealer to order some of the black KJ Kamados. Will help with the transition. lolNever used the salt block but have seen some great looking seafood cooked on them. Shrimp, Scallops and fish. It just takes some time to get the block hot enough to cook on. Also center cut pork medallions.Post some photos of your first cook...Thank you,DarianGalveston Texas

I have one, you can cook pretty much anything on it. I marinate shrimp and scallops in evoo and some cayenne, old bay or what ever. Slowly get the salt hot to 400-500 degrees and cook a few minutes a side, you will know when it is done.
