Dutch Oven Question

Gonna make my first pot of chili on the egg tmrrw and had a couple questions. Do I use the platesetter and put the Dutch oven right on that or do I use the grid with the platesetter or do I go direct? Mine has the feet on the bottom of the pot. Also what kind of temp do I run at to start browning the beef and what temp to simmer?

You're going to want an air gap for your meat and bean stew.

I made Chili on the egg. Really good with smoky taste. I have a camp DO (the one with the feet).I used plate setter legs down and DO on top of that.

Sorry, I missed the feet part. I like to go 325-350 for this cook. I leave it on for a couple of hours.

Turned out pretty good. Went with plate setter legs up. Had to run about 425-450 while I was browning burger an then settled it down to simmer for a couple hours. Has a great smoky flavor. Definitely will do this again.

And as you have one with legs, do you ever cook with the DO by placing coals on the cover and under the bottom?

Thinking of getting a Dutch Oven. Do you ever put it directly on the coals or is that a stupid question?

Only time I put a dutch oven directly on the coals is when searing/browning for a short period, or to pop popcorn. The food inside burns quickly from the bottom. Normally, with a camp oven (one with feet), you put more coals on top than bottom for baking.Houston (Clear Lake) TX

I use a trivet inside my DO and put coals on top and under the bottom, but yes, I put more on top than under.
