Man this was fantastic...somewhat a labor of love, but worth it. Grilled chicken drumsticks raided direct image Removed and set aside chicken image In a large cast iron oven safe pot, sauté bacon until rendered. Some bacon is good, so the full pack must be better, right? image Add chopped celery, onion and carrots and Sauted until onions are translucent image Add 1 cup Burgundy wine and half cup tomato paste, cook about 3 minutes image Add three more cups wine, boil until reduced by half image Put chicken in pot, add 1 quart chicken broth, rosemary and thyme. Bring to boil, cover, and put in 350 degree preheated oven. image Here is how it looks after 90 minutes: image In separate pan, sauté mushrooms until brown, about 8 minutes image Remove chicken, put in pot with mushrooms and keep warm. Simmer sauce 15-20 minutes until reduced by half. image Put mushrooms and chicken back in pot with reduced sauce, stir. image Serve. Don't make the mistake I did and forget French bread! No idea why I played this instead of putting in bowl. image
