CORNBREAD COOKED ON THE BGE

My second Arkansas cornbread baked on the BGE at 450F. Put on the top rack Took about 20 minutes. It's made with fine cornmeal, two slices of bacon chopped up, buttermilk, egg, salt, soda. Just the real thing. No sugar and no flour. Eat it with a mess of mustard greens and a glass of buttermilk. WOW damn that was good.

Yes 4Runner, I left the bacon fat in the CI skillet and preheated to 450. The cornbread mix sizzles when you pour it in. Gives you the nice brown exterior and extra flavor, plus I think it helps the mixture not to stick to the pan

What I wish was around me was a stone mill where I could get real off the cob corn fresh ground with all the corn flavor. Next time I will get a fresh ear and grate off the kernels and mix that in. OH MY

Nice cornbread. I have never done it on the Egg but that could be next.Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.

I am guessing from the no flour you are somewhat in the South. Have you ever made it also adding cream corn, onions, jalapinaos, and cheese?Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.

Yes Mickey to shredded fresh corn, cheese (sharp cheddar) onions and bacon, but not jalapenos. I live in California but was born and raised in the mountains of NC
