Saturday's supper in the making

Went to Fresh Market and picked up today's and tomorrow's meats, now we are off and running Tonight is going to be Reverse Seared Chops,Rosemary Sweet Potatoes (thank you @Dyal_SC ) and balsamic eggplant.
Sweet Potatoes are on the egg at 400 indirect

And the chops just hit the small at 300 indirect till sear time. Chops are rubbed with Loveless Cafe Peach Rub

Eggplant is sweating with some salt and will go on when chops come off.

@Dyal_SC - that is balsamic glaze and feta. Added just before the eggplant was ready.

Mrs. Dyal is the one who found the sweet potato recipe. The added saltiness from the parmesan and herbs, and the lack of extra sweet stuff is what makes me like these. I usually hate yams and sweet potatoes, because they are TOO sweet. But this recipe I really like.

@Mattman3969‌ , do you have a particular recipe for the balsamic glaze? Would love to try it, as that's right up our alley.

This is what I use. I get it at Fresh Market and I think Walmart has it. I've never made my own but the recipes don't seem to be very difficult. Just reducing regular Bslsalmic vinegar.
