Here are a few recent mini BGE cooks. GA Cracked Pepper Sausage, a rack of Spare Ribs and some Chicken Breasts. The spares were too tall to roll, so I ended up cutting the rack into thirds and layering them. I placed a foil contraption between them to provide good airflow. They turned out nice! After smoking the ribs, I still had enough coal left in the mini to cook a few chicken breasts for the work week.
Then it was just me one night, so I used the leftovers from the sausage and chicken for this. Kinda fajitaish I guess. Added in some spicy Cajun seasoning, onions, mushrooms, chopped jalapeños, and pepper jack cheese towards the end. Placed the CI skillet on the Mini and got it happy. It ate real good.
