Smashed Griddled Bison Burgers (pics)

SMASHED on CAST IRON is now our favorite way to do burgers, so tried using some local buffalo meat last night. Buffalo has less fat/flavor so brushed both sides of the patty with melted butter & garlic powder then got the griddle on the egg at 450 for a good 30 mins. I smashed per the instructions on the link here . . . turned out excellent. I would highly suggest this approach if you have never tried it before.

Smashed are the best. I like the way they do it on Serious Eats. Make a 2 inch hockey puck and drop it on the griddle. Smash with your spatula/press in the first 30 seconds. Cook for about 90 seconds then flip for 30.
