Salmon Leftovers Re-Purposed

I made salmon fillets on the egg Sat night and turned the leftovers into some kickass salmon patties tonight. The original patties had just the right amount of smoke so I baked them in the oven because no more smoke was needed. Hence why the thread is OT.
Sautéed some red onion,red & yellow pepper, celery and capers and added some Old Bay to the mix. Shredded about 1/2lb of salmon and added to a mix that had seasoned breadcrumbs,yogurt and very little mayo with some hot sauce and baked till crispy. image

    Looks great to me! I love to re-purpose meats which I honor by calling them "make aheads" not left overs! Here's a favorite salmon dip I like to make.

    SMOKED SALMON SPREAD*


    Tasty use of left over smoked salmon though you're liable to smoke some salmon just to make this spread! I have found 4 oz is about the size of my medium sized hand.


    Ingredients:

     4 Oz Smoked salmon finely chopped

    16 Oz softened cream cheese

    3 Tbs Litehouse brand freeze dried chopped chives

    1 tsp Hungarian paprika


    Instructions:

    Blend all ingredients in a mixing bowl using a fork until smooth.


    Serve as a spread on crackers or on bagel pieces.

    My mom used to make salmon patties when I was a kid. Haven't had one in a long, long time. Yours looks great!

    Mom used to make them too. She used canned salmon and pan fried. As a kid I would use as much ketchup as the patty was big just to get it down. Funny how your taste change as you get older.

    Mattman that is EXACTLY as I remember them. At some point mom started using canned tuna because you didn't have to pick the bones out of it like you did the salmon.

    This thread makes me think that I should be preparing larger salmon portions so we have leftovers or as @RRP‌ calls them "make a heads". My wife loves salmon patties, but we rarely have any leftover salmon.

    looks good from here, i actually like the patties better than the salmon dinner

    I usually just use leftovers in a salad with some ceasar dressing.  May have to re-think that now.
