Weekend Guests/Football/Vittles (Pic Heavy).

Our guests arrived Friday at around 10 PM. I lit the egg around 945 PM to get the temp settled in. Used RW and chunks of oak mixed in throughout for smoke.

Brisket was trimmed and seasoned with a simple S&P rub. I did try some new salt and the pepper was fresh ground peppercorn (measured each out to 40 grams for a 50/50 by weight).

Stoker and brisky in the egg now (I guess it was around 1030PM).

Roughly 15 hrs later it probed like buttuh. But, we weren't due to eat for another 5 hrs so FTC (minus the towel). Which gave me time to get ready for the Husker game. We watched collegiate football all day.
