Put a 4 1/2lb Chuckie on the small this mornin at 275 and just lettin it ride. Gonna try this one no foil unless someone says no.

Looks amazing, haven't had time to do something worthwhile lately so looking at others stuff makes me smile.I raise my kids, cook and golf. @PNWFoodie - low n slow is what I found best for pulled chuckies. Start @225-250 till the IT hits 160 and then foil with beef broth & Worcestershire and bump temp to 350. It generally probes like buttah around 212-215. For the rub I used Bad Byrons Butt rub.-----------------------------------------analyze adapt overcome2008 -Large BGE. 2013- Small BGE and 2015 - Mini. Great cook-pulled beef, always a winner. Enjoy the eats.Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.

You can let it continue to simmer once it's pulled as well (like pepper beef stout) - beer works, as does wine.
