I cut 2 sirloin tips into 1/4 inch pieces then marinated it over night.
2/3 cup soy
2/3 cup Worcestershire sauce
2 tsp onion powder
2 tsp pepper flakes
2 tsp black pepper
Then I started a small fire in the middle of some used lump, stabilized at 190 then added a chunck of apple wood and the plate setter, cooked for 8 hours. Turned out great!
